Raw Vegan 'Zucchiroom' Cheese Pasta

If you never try raw meals and you think they are not savory enough for you, you must try this one!

Perfect for a meal with friends.

Here is what you need:

Pasta:

- 2 big zucchinis

- 8 chestnut mushrooms

- pinch of lemon and black pepper

Dressing:

- 2 cups soaked cashews (1 hour in warm water or overnight)

- 1/2 nutritional yeast*

- 1/2 cup filtered water

- 1/4 cup fresh lemon juice

- 1/2 tsp Himalayan salt

- 1/2 tsp onion powder

- 1/2 tsp garlic powder

Garnish:

- parsley or coriander

Equipment:

- spiralizer

- knife

- chopping board

- big bowl for mixing

*this product is not raw

Here's what you do:

Let's prepare the pasta first.

Grab your spiralizer, your big zucchinis and the chestnut mushrooms.

Peel the zucchinis and twist it in the machine. Easy! Put into a bowl.

Cut the mushrooms as you desire. Then put them into the same bowl with a pinch of lemon juice and ground black pepper. Reserve.

Now we will prepare the "cheese" dressing.

Rinse the cashews, and put them into a blender with the rest of the ingredients.

Add more lemon juice or water, it depends how do you want your consistency.

Press the button and let the blender work!

Drop your dressing into the pasta bowl, and mix with your hands, fun!!!

Ooookkk!!!!! Mmmmm smells good!

Grab your favorite bowl and drop some ""Zucchiroom Cheese" Pasta and enjoy this amazing meal!!!

You can also garnish it with parsley or coriander!!! Yummmy!!!! :)
